Strawberry Cheesecake Recipe

Well hello lovelies,

He is my strawberry cheesecake. This is just a mish mash of lots of recipes I have tried. An I like this version the best. 

Ingredients
Base
250g digestive biscuits
100g melted butter
Filling
200g strawberries (you can add more if you like. It all depends on how much strawberry flavour you want)
1 vanilla pod (seeds from the inside)
600g soft cheese (I use mascaponi)
100g icing sugar
284ml of double cream. 

Method
Crush up you biscuits into a fine crumb
Melt your butter in a low heat, mix into the crumb and and press firmly into the cake tin base. 
Place into the fridge for about an hour 

While your base is setting. You want to add 200g of strawberries, the inside of a vanilla pod, 600g soft cheese, 100gicibg sugar and 284ml double cream. 

Throw it all into a bowl and give it a mix. 

Give it a mix till smooth. 

Scoop this onto the top of the cheese cake base and refrigerate for an hour. 

Voila!! Your strawberry cheese cake!!
